Smashed Celeriac

Ingredients
- 2 large celeriac bulbs
- 2 tablespoons butter or olive oil
- Salt and pepper, to taste
- 2 tablespoons chopped celeriac greens or parsley
Directions
- Peel celeriac (a knife works better than a peeler)
- Cut into 1-inch cubes and place in a pot of salted water
- Bring to a boil, then reduce heat and simmer 15-20 minutes, until fork-tender
- Drain well and return to pot
- Add butter and chopped greens. Mash gently.
- Season with salt and pepper and stir until combined. Serve hot.
