Ingredients
- ½ cup sweet onion, sliced
- 1 garlic clove, finely chopped
- 3 new potatoes, tiny, quartered
- ¾ cup carrots, sliced
- ¾ cup asparagus pieces
- ¾ cup sugar snap peas or green beans
- ½ cup radishes, quartered
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tsp dill
- 1 tsp. olive oil
Directions
- Heat oil in skillet over medium heat.
- Cook onion for 2 minutes. Add garlic and cook 1 more minute.
- Stir in potatoes and carrots. Cover, reduce heat to low, and cook about 4 minutes, until nearly tender.
- Add a tablespoon or two of water if vegetables start to brown.
- Add asparagus, peas, radishes, salt, pepper, and dill. Cook, stirring often, for 4 more minutes or until tender.
- Serve immediately.
