Ingredients
- 1 medium tart apple, cored and diced
- 1 tsp lemon juice
- 1 head radicchio, cored and torn into bite-sized pieces
- 4 cups fresh spinach, stemmed and torn into bite-sized pieces
- 2 oz crumbled blue cheese
- ½ cup chopped pecans, toasted
- 2 ½ Tbsp canola oil
- 2 Tbsp cider vinegar
- 1 Tbsp honey
- 1 ½ Tbsp Dijon-style mustard
Directions
- In a small bowl, sprinkle diced apple with lemon juice
- In a large bowl, combine apple, radicchio, spinach, blue cheese, and pecans
- In the same small bow, whisk together oil, vinegar, honey, and mustard.
- Pour dressing over salad and toss until evenly coated. Serve immediately.
