Rainbow Rice Salad

Flavorful and beautiful, this colorful rice salad works well as a side for your favorite protein dish.

  • 3 cups cooked brown rice
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 avocado, diced
  • 3 green onions, chopped
  • 1/3 cup low sodium soy sauce
  • 1 Tbsp. sugar
  • 1 Tbsp. oil


  1. In a large bowl, mix rice, cucumber, bell peppers, avocado, and green onions.

  2. In a small bowl, whisk together soy sauce, sugar and olive oil.

  3. Add dressing to salad and toss together.

Serving Size: 1/2 of quesadilla
