Carolina Peas & Rice

Ingredients
- 1 Tbsp olive oil
- 1 onion
- ½ tsp. salt
- 3/4 lb. collard greens (fresh or frozen)
- 1 tsp. smoked paprika
- 1 tsp. thyme
- 2 cups water
- 2 Tbsp. vinegar
- 1 (15 oz.) can of low-sodium or rinsed black-eyed peas
- 2 cups cooked brown rice
- Hot sauce (optional)
Directions
- Heat pot on the stove and add oil when hot.
- When the oil is hot, add the onion and salt, and stir occasionally until the onions are soft and clear about 6 minutes.
- Add collards, smoked paprika, and thyme, and cook until the greens are just wilted (about 1 minute).
- Add water, stir, cover the pot, and cook until the greens are just tender (about 5 to 10 minutes).
- Stir in vinegar, black-eyed peas, and rice. Cover pot, turn the heat down to low, and cook for 5 minutes.
- Serve right away and serve with hot sauce (optional)
